Hearth Brick Thickness 25mm V 115mm

I am at the stage to start laying my bricks when an oven builder from WA told me to use 25mm bricks/refractory tiles instead of 115mm as the pizzas are crispier and that the 115mm users were complaining that the pizza wasn't crisp. Is there any truth to this?
Also for my door arch if I used a steel arch to support the brick would it make any difference apart from the steel becoming very hot?
The reason for the steel arch is that my oven door would fit snug under the steel arch than bricks.
