I did a 14 lb. turkey for our Thanksgiving (US) at 420 deg F in 2hr and 15 min. I brined the bird overnight (1/8 cup sea salt + 1/8 cup brown sugar per quart water - about 6 quarts to cover bird and hold in refrigerator - add onion, garlic and herbs for flavor too). Pat bird dry and cover with butter and seasoning. I put bird in pan on a layer of coarse chopped onion, carrots and celery. Popped into oven, uncovered, and it was super perfect awesome.
