Yes you can make arches more flat instead into a circle. Leave the center vault height as is, adding extra 1 or 2 bricks makes the arch sides pushed out and elliptical. You can do this no problem just don't make the ceiling too much flat it has to stay arc. In fact you can shape the arch freely right up from the floor, sharper radius on sides then vault and back again (if the sharper radius section created bigger "V" gaps between bricks choose to use there 51mm - 2" thick fire-clay bricks avoiding more mortar usage!) r
