Cabbage Soup

… is one of the most popular and most probably the tastiest soups that comes from the traditional Slovakian kitchen. It is not only delicious soup but nutritious as well. Here is a very simple recipe for how to make it in a pot of 8 Liters or 2 Gallons in volume.

What to buy

Cabbage soup cooks really well in a two or three times larger pots. For making a larger quantity just multiply each ingredient.

Ingredients in Metric measuring

  • 900g of potatoes (3 large)
  • 680g or more if you love it, of sauerkraut or home made fermented white cabbage
  • 200g of sour cream (in Australia we use Barambah organic cream)
  • 30g plain flour (optional but nice)
  • 30g butter (optional but nice)
  • 1 Tbsp of sweet red paprika
  • 1 egg yolk (optional but nice)
  • 2 or more Spanish chorizo sausages, or smoked meat, or vegetarian substitute
  • handful of parsley to garnish
  • sea salt to taste
  • 20g dried mushrooms (shiitake, porcini, reishi or an edible mix kind)
  • 4 L filtered or natural water

  • 2 lb of potatoes (3 large)
  • 1-1/2 lb or more if you love it, of sauerkraut or home made fermented white cabbage
  • 7 oz of sour cream (in Australia we use Barambah organic cream)
  • 1 oz plain flour (optional but nice)
  • 1 oz butter (optional but nice)
  • 1 Tbsp of sweet red paprika
  • 1 egg yolk (optional but nice)
  • 2 or more Spanish chorizo sausages, or smoked meat, or vegetarian substitute
  • handful of parsley to garnish
  • sea salt to taste
  • 3/4 oz dried mushrooms (shiitake, porcini, reishi or mixed varieties)
  • 1 Gal filtered or spring water

How to cook the cabbage soup

  • peel and cut the potatoes, put them in the pot with water, add salt and cook the potatoes for about 15 min.
  • add cabbage, chorizos (if using) and mushrooms, cook together until soft (about 40-60 min)
  • once cooked, mix sour cream with egg yolk and pour into the soup, cook for a bit all together
  • at the end when stove is turned off, mix in the sweet paprika and garnish with chopped parsley herb
  • perfect cabbage soup for cooking in 2, 4, 6 gallons equals 8, 16, 24 liters large cooking pots
