I think I found the best way to roast a standing beef rib, I don't know if it translates to lamb but it sure makes great roast beef.
I cook the roast @200f until the internal temp (measured with a good thermometer) reads 110f then I turn up my oven to 500f and cook it until internal temp is 135f.(Be careful it only takes a few more mins. Watch it) The outside is seared just right and inside is a beautiful medium rare, it's just great!
