Instead of making roof, I spread a layer of concrete over the vermiculite insulation. Around the brick chimney I put expansion joint material which was sealed at the end with a flexible sealant.
The outdoor area is made of logs and the oven fits to it extremely practically. We have a fireplace in the log area also, often we sit close by the fire, listening its sounds, and have a few tasty cocktails while waiting for the oven to heat up. Loads of clear vertical grain Fir, and even heavy chunky logs – this wood looks fantastic and is very prized in the Pacific Northwest region.
I built this MTO wood fired brick oven in spring of 2009. For four years I immensely enjoyed using the oven. I also cooked in it during winter when the oven was completely covered with snow. Then we had to move to a new house. Therefore I am about to build my new oven. This time it’s gonna be the new MTO model, the third MTO model generation.

And then, just one week after they had completed it, the Hurricane Sandy come through their location when it took down a tree that was closest to this oven and the house. Luckily it fell down in the opposite way.

Now he can use his oven and the entertaining area whole year round. No mater whether it is raining or snowing, the roof protects / covers the whole outdoor area behind their house. This gas and wood burning pizza brick oven heat source combo can be heated up to cooking or bread baking temperature by gas fuel, with a flame from gas burner, or common wood fuel. I bring out a gas bottle with a hose connected to the gas burner and point it into the oven through a small burner hole to bring / direct the gas flame inside.
I was thinking about using the storage space under the hearth as another firing area to feed a pit both with stone veneer on. These ovens are some of the most highly rated in the nation. Initially I was thinking about a combo pizza oven / smoker each with veneer stone glued on. Use the space under oven as a fire box for a smoker to right hand side. Right side has metal top, grills under, counter weight to lift, and 2nd smokestack far right.
This beautifully built oven has matching flagstone on the outside with the same stone glued on the fireplace. The oven has a tall chimney going upwards just besides the roof over the relaxing hat. Thanks for your source of expertise!
