Helen and Ross big birds had stuffing and were nicely done each with a jar of juice for making gravy. These were smoked as well. Simplest way you could possibly imagine smoking meat, fish, turkey, chickens or ducks is to throw a small 30cm or 1ft long tree twig on top of a hot ashes at the back of the dome as you uncover your roasts. In ten minutes it starts to smoke, and because the oven door is closed it will not burn down and will last for the job.
